Keeping time : Between 4 and 8 years
Geology : Fairly deep soil. Clay and limestone.
Culture : Total Ploughing, no chemical weeding. Sustainable Phytosanitary control.
Wine making and ageing : Pneumatic pressing. Fermentation on fine lees, in oak barrels, with regular stirring. Bottling after ageing of 12 months in barrels (20% new oak), then 6 months in tank and a light clarification.
Tasting and service : Beautiful golden robe with light green reflections, bright and brilliant. Pleasant and intense nose opening on white flowers notes and spices a light mineral note at the end. Service beetween 12° to 14° with scampi on curry sauce.
