Keeping time : 5 to 10 years.
Geology : Sloping and heterogeneous hill-side. Very clayey soil at the bottom. Presence of white marls on the top.
Culture : Total ploughing , no chemical weeding. Phytosanitary control
Wine making and ageing : 25 days of maceration in thermorgulated vat, including 12 days of prefermentation at 12 °C. Regular punchings of the cap and pumpings over the must. Bottling after 18 month ageing in oak barrels. Light clarification.
Tasting and service : Intense rubis colour. Fine nose which offer a beautiful Pinot Noir expression. Aromas of little black fruits, peppery notes, violet aromas too. Fleshy and well-balanced mouth, with a tannic, rich and concentrated texture. Beautiful lenght. Service between 12° to 14° with terrine of wild boar.
